Mulled Cider Recipe

We’re excited to have reached that time of year again where we can ward off the winter chills with a warming brew of festive beverages! Our favourite is a spicy and sweet mulled cider, we have a pot of it simmering away at our annual Open Studios event all of this weekend (pop by Cockpit Arts in Holborn to sample some!).
Here is the recipe, an adaption of Jamie Oliver’s, slightly less fruity a touch more spicy and splashed through with extra warming rum:
Ingredients:
2 litres of cider
120ml dark rum
500ml apple juice
8 cloves
2 cinnamon sticks
4 cardamom pods, bruised
¼ nutmeg, finely grated
2 clementines
4-5 tablespoons caster sugar
Method:
1. Pour the cider, rum and apple juice into a saucepan and put over a low heat to gently warm through for a few minutes.
2. Cut the peeled clementines in half, stick a couple of cloves in each half and add them to the pan, along with the cinnamon sticks and spices and turn the heat up. once boiling, turn down to a simmer and leave to bubble away for 5-8 minutes.
3. All the ingredients will infuse together beautifully as it simmers through. Add sugar to taste, you don’t want it too sweet but sweet enough! When you’re happy with the flavours, ladle into mugs and serve warm.
